Vitamin K – types and sources:
Vitamin K refers to structurally similar fat-soluble compounds. It includes two natural vitamins:
-
Vitamin K1 (phylloquinone) - is produced by plants and is found in the largest quantities in green leafy vegetables, as it is directly involved in the process of photosynthesis.
-
Vitamin K2 (menaquinone) - mainly from animal foods such as meat, eggs and fish, but also from bacteria through the process of fermentation. Vitamin K2 in turn consists of chemical subtypes, the best known of which are: menaquinone-4 (MK-4) and menaquinone-7 (MK-7).
What is natto and what is its connection to vitamin K:
Natto is a traditional Japanese delicacy made from boiled soybean sprouts that have undergone a natural fermentation process before being cooked. This food is rich in vitamin K2, as well as other vitamins and valuable minerals. Natto is an excellent food for any vegetarian.
Action and health benefits:
- Participates in blood coagulation
The human body needs vitamin K for the post-synthesis modification of certain proteins that are needed for blood to clot (coagulate). Without vitamin K, coagulation is impossible and uncontrolled bleeding occurs.
Controls the binding of calcium to bones and other tissues. Vitamin K deficiency leads to weakening of bones, causing osteoporosis. It can also cause calcification of arteries and other soft tissues.
People who suffer from vitamin K deficiency are at higher risk of developing coronary heart disease, due to hardening of the blood vessels that supply the heart. MGP is a protein that stops the calcification of blood vessels, and is activated by vitamin K.
There are studies that prove the connection between normal vitamin K levels and memory ability in older people.
