Nutritional yeast is produced by high-temperature heat treatment of the yeast Saccharomyces ceresiae. As a result of this method, it becomes inactive, unable to ferment. The yeast itself is fed molasses (a sweet medium from sugar cane or sugar beets).
Unlike baker's and brewer's yeast, dry nutritional yeast flakes cannot be used for baking. But they are a delicious and nutritious seasoning. They have a yellow-orange color, a characteristic cheese aroma, and a nutty aftertaste.

The composition of dry yeast flakes includes:

- micro- and macroelements: sodium, calcium, potassium, phosphorus, iron, zinc, chromium, selenium, manganese, molybdenum;
- all 9 essential amino acids;
- vegetable proteins;
- beta-glucan (soluble fiber);
- glutathione;
- nucleotides.
Dry yeast does not contain sugar, gluten, or dairy products, which makes it popular among vegetarians and vegans, as well as all those who are forced to limit their consumption of these products for health reasons.

- Dry yeast flakes are low in calories. However, they are high in fiber. Excessive use of yeast can lead to discomfort, cramps, and abdominal pain.
- Headaches, migraine attacks – are due to tyramine, a compound derived from the amino acid tyrosine, which occurs naturally in nutritional yeast.
- Redness of the facial skin, burning sensation, itching - occurs after consuming a larger amount of yeast and is due to niacin, also known as vitamin B3.
- Individual intolerance to yeast.
