Mattisson's ABG10+® Black Garlic is a product created on the basis of fermented garlic. Fermentation at a temperature of 60 degrees ensures that the active ingredients of the garlic are better absorbed. The unusual black color appears without any additives. During the fermentation of the sugars and amino acids contained in the garlic, melanoidins are formed - substances with a dark brown, almost black color, which color the final product. Fermentation is actually a type of caramelization, which is why black garlic is much sweeter and gentler than white. After the fermentation process, the cloves are dried and ground into powder, which is then enclosed in vegetarian capsules.
What is black garlic (Allium sativum)?
Black garlic is not a special variety, but ordinary white fermented garlic. The final product does not have the usual unpleasant smell, its taste is sweet, and the texture resembles dried fruit. Black garlic is a new and fashionable product in healthy eating diets, but it has been used for more than four thousand years in Korea and has long been well known in Thailand.
